This recipe is just a guideline. I don’t usually follow these exact measurements or combinations.
1/3 cup milk
2/3 cup eggnog
1.5 fluid ounce jigger brewed espresso, or regular brewed coffee or instant coffee
1 pinch ground nutmeg or cinnamon or a little of both

Warm milk and eggnong slightly. Add hot coffee and pinch of nutmeg. Stir briskly! Enjoy.

As I said above, I’ve messed with this recipe to suit my tastes. I love strong coffee with a just a slight bit of cream, so I use less milk and eggnog. I’ve also made this recipe with strong instant coffee. Not my favorite way to enjoy a latte, but it works well when you want a “Faux-tte”. (And yes, that’s my word!)

Cranberry Pumpkin Cookies

Cranberry Pumpkin Cookies

Ingredients

2 cups all-purpose flour
2 tsp ground cinnamon
1 tsp ground cloves
1 tsp baking soda
1 cup (2 sticks) butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 cup Libby’s 100% Pure Pumpkin
1 large egg
2 tsp vanilla extract
1 1/2 cups dried cranberries, coarsely chopped
2/3 cup White Chocolate morsels

Directions

Preheat oven to 350 F.
Makes 4 dozen cookie

Combine flour, cinnamon, cloves and baking soda in small bowl. Beat butter, granulated sugar and brown sugar in large mixer bowl until creamy. Beat in pumpkin, egg and vanilla extract until blended. Gradually beat in flour mixture. Stir in cranberries and morsels . Drop by rounded tablespoon onto greased baking sheets; flatten slightly with back of spoon or greased bottom of glass dipped in granulated sugar.

Bake for 11 to 14 minutes or until centers are set. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Cranberry Pumpkin Cookies

I’m frantic cool like that. (And yes, frantic, is my new word. I’ll be abusing it, don’t you worry!)

So now, onto the Pumpkin Bread Recipe that I’ve been withholding from you all for almost 2 weeks!

Pumpkin Bread
3 cups flour
1 teaspoon salt
2 cups sugar
2 teaspoons baking soda
2 cups pumpkin puree
1/2 cup vegetable oil
1/2 cup applesauce
4 eggs, beaten
1/2 cup water
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon allspice

Preheat oven to 350˚F. Butter 2 loaf pans. Sift together flour, salt, sugar and baking soda. Mix the pumpkin, oil, apple sauce, eggs, water and spices together, then combine with dry ingredients. Don’t over mix. Pour into loaf pans and bake for 1 hour or until a knife comes out clean. Remove from oven, turn onto wire rack and cool. (or not … *smile*)

Toppings

Dollop of whipped cream (the real stuff – that you pour out of the carton and whip with your blender), sprinkled with cinnamon
Whip cream cheese and heavy cream together to form soft peaks. Spoon onto pumpkin bread and add sliced almonds
Lastly, my favorite!

Drizzle Ducle de Leche over slices. (HEAVEN)

If you don’t have a recipe for Ducle de Leche I recommend Kay’s recipe at Dutch Girl Cooking. Super simple and perfect! I stumbled onto Kay’s blog a while back and have been enamored ever since. Frankly, her photos are spectacular, and I love her uncomplicated way of showing how to prepare each dish.

But really, if anyone ever needs anything, I’m sure I have it. And this isn’t even the whole pantry area. There are four more doors that I can’t really photograph because I’d have to get under the table and there’s not much light. And well folks, it ain’t pretty! It just ain’t!

PUMPKIN DIVINE MARTINI

Ingredients:
* 1/2 oz Sylk Cream Liqueur
* 2 oz vanilla vodka
* 1/2 oz pumpkin liqueur or pumpkin spice syrup
* 1 tsp whipped cream
* cinnamon stick for garnish

Preparation:
1. Pour the Sylk Liqueur and vodka into a shaker filled with ice.
2. Shake well.
3. Add the pumpkin liqueur or syrup.
4. Shake again.
5. Strain into a chilled cocktail glass.
6. Top with a teaspoon of whipped cream.
7. Garnish with a cinnamon stick.
