<p>The challenge ingredients are&#8230;<br />

<p>Corn Flakes<br />
Hot Sauce<br />
Honey</p>
<p>When I create a recipe, I really have to let it marinate. (HA!) I&#8217;m one of these cooks that comes up with new recipes based off of freak ideas that I think will work, and more often than not I&#8217;m pleasantly surprised. You thought I was going to say disappointed, didn&#8217;ja? No faith!</p>
<p>I bring you&#8230;..(Barbie size drum roll please)</p>
<p>Island Fish</p>
<p>1 &#8211; 1 1/2 cups crushed corn flakes<br />
1 egg, beaten<br />
2 tbsp light olive oil<br />
1/4 cup honey, melted<br />
1 tbsp hot sauce<br />
4 fish fillets, washed and patted dry (cod, haddock, halibut, tilapia)</p>
<p>Preheat oven to 350.</p>
<p>Add oil, honey and hot sauce to beaten egg. Line a baking dish with tin foil and spray lightly with cooking spray. Dip fish fillets in egg mixture and then dredge in crushed corn flakes. Place in baking dish. Bake for 15-20 minutes.</p>
<p>Sauce</p>
<p>2 tablespoons olive oil<br />
1/4 cup onion, finely chopped<br />
1/4 cup honey<br />
2 tbsp  brown sugar<br />
1 tbsp hot sauce<br />
2 tsp apple cider vinegar<br />
2 tsp Marsala cooking wine<br />
1 tsp garlic powder</p>
<p>1/4 cup fresh cilantro, roughly chopped</p>
<p>Heat oil over medium heat and stir in onion and hot sauce. Cook 6-8 minutes until onion is translucent. Stir in honey, brown sugar, vinegar, wine, and garlic powder. Wisk until smooth. Bring to a boil over medium to low heat and simmer for about 20 minutes, while fish cooks, stirring occasionally until sauce thickens. </p>
<p>Remove fish from oven when done. Let cool 2 minutes. Place each portion on a plate and drizzle with honey sauce. Sprinkle cilantro over fish portions, and serve more sauce on the side for dipping. I also mashed avocado and served that on the side as well. Fantastic way to cool down the little bit of &#8220;spicy&#8221; after tone of the sauce.</p>
<p>I bet you get hooked on the sauce&#8230; *hiccup*</p>
